    Description

    This position plans, directs and coordinates the activities of the production, trayline and catering employees in order to prepare and deliver a finished food product for consumption.  This position ensures compliance with Aramark and client policies, procedures, guidelines, and standards as well as all applicable government, regulatory and/or accrediting agency standards and codes.

    • Implements and executes established policies and procedures for all food and supplies purchased and received to meet established standards and achieve forecast objectives.
    • Monitors completion of production records.
    • Implements and monitors unit safety program in production and trayline areas.
    • Directs activities of the tray assembly employees to ensure accurate and courteous service to guests, customers and clients.
    • Directs activities of catering services to ensure accurate and courteous service to guests, customers and clients.
    • Assists with development and implementation of appropriate patient menu program to ensure patient satisfaction and tray accuracy.
    • Develops and implements sanitation schedules for production and trayline areas. 
    • Makes daily sanitation rounds.
    • Participates in selection process of production, catering and trayline employees.
    • Develops and monitors orientation program. 
    • Develops and conducts appropriate in-service education programs to meet requirements of regulatory agencies.
    • Completes performance appraisals and recommends salary actions, as deemed, per established policy. 
    • Implements disciplinary actions, when needed, per established policies and procedures and standards of conduct.
    • Establishes effective monitoring system to ensure purchasing compliance with Aramark and client requirements.
    • Monetary dietary requirements to ensure compliance with Kosher dietary law within client system.
    • Assists with implementation and monitoring of Aramark Quality Improvement Process (TQM).
    • Performs all other duties as assigned.

    This position reports to Director of Operation Services and supervises Production Supervisors and Chefs.  This position has frequent contact with client department heads and patients.  This position makes decisions concerning food production, presentation and employee relations.  Communicates regularly with other Aramark personnel.

    Qualifications

    • Education achievement equivalent to a Bachelor's degree in Institutions Management, Foods and Nutrition, Business Administration or other related fields.
    • Past experience shall be considered in lieu of educational qualification, as appropriate.
    • This position requires the ability to respond effectively to changing demands and demonstrates quality management and leadership skills.
    • This position requires good written and oral communication skills.
    • Minimum of three year's successful experience as a Food Production Manager in a minimum grade 9 account is required.
