    Position Description:

    As the Chef Manager for Aramark, in conjunction with University of Minnesota Athletics, you will be responsible for adapting and creating sports performance cuisine for over 725 student-athletes during the academic year. This position will work closely with the Director of Performance Nutrition to produce delicious meals and snacks that meet the unique nutritional demands of elite athletes while also having it be appealing, creative and presentable. This Chef Manager will assist with the implementation of nutrition education systems, nutrition periodization, menu cycling and help promote proper menu items for individual athlete desired goals. Position will execute the in-kitchen vision of the University of Minnesota Performance Nutrition team by continuously evolving and improving food quality and cooking techniques.

    Scope of Role:

    Level of impact is a single dining facility with a total volume of approximately $2M. This dining facility will cater to University of Minnesota student athletes. Generally manages 15 - 25 employees.

    Key Responsibilities:

    • Delivers strong operational performance by executing against Aramark Higher Education and regulatory agency standards and programs, continually monitoring operations, and completing assessments and necessary action plans to provide optimal food quality and meal service.
    • Selects and implements recipes in partnership with University and Aramark Dietary Team to ensure consistent quality and guest satisfaction.
    • Serve as a nutrition resource for student athletes and staff.
    • Drives customer satisfaction, and maintains client relationships through rounding.
    • Checks appearance of service personnel for compliance with uniform requirements prior to assigning to work stations.
    • Ensures compliance to food safety, sanitation and overall workplace safety standards.
    • Supervises, trains, conducts applicable rounding and manages the performance of the department to include the culinary team and student workers regarding food presentation, proper serving methods, portions, quality, cost control and food safety and sanitation.
    • Assists in interviewing and hiring; conducts training, planning, assigning and directing work, evaluating performance, rewarding and disciplining associates; addressing complaints and resolving problems.
    • Responsible for managing process of purchasing, receiving, and managing food production activities in compliance with Aramark Higher Education food production systems.
    • Ensures recipe compliance to maintain consistent quality.
    • Manages and controls resources and materials to ensure quality, adequacy of supply and cost control within budgetary guidelines, and responsible for menu planning, pre-costing and post-costing.
    • Creates and maintains cleaning checklist, schedules, accurate payroll records and accurate attendance records.
    • Additional tasks and responsibilities may be assigned at the discretion of the Food Service Director. Tasks and responsibilities may be added or revised based on volume of business and the need for the work to be completed at the present time.
    • Cultivates the "All-In" family atmosphere of the University of Minnesota and University of Minnesota Athletics.

    Qualifications

    • Ideal candidates will possess a Bachelor's degree or related culinary degree with 3 to 5 years of industry & culinary management experience in high volume environment.
    • The ability to manage in a diverse environment with focus on client and customer services is essential to success in this role.
    • Previous experience with controlling food & labor costs and development of a culinary team preferred.
    • P&L accountability and/or contract-managed service experience is desirable.
    • 1+ year of experience with athletic nutrition is preferred.
